Ingredients

  • 1 Greek-style Natural Soybean (400 g)
  • 100 g strawberries
  • 100 g of blackberries or currants
  • 1 yellow peach
  • 2 apricots
  • 2 tablespoons of hazelnut oil
  • 3 tablespoons agave syrup
  • The juice of a lemon
  • Some fresh mint leaves

For the homemade granola

  • 100 g of rolled oats
  • 1 and ½ tablespoon coconut oil
  • 2 tablespoons agave syrup
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon flax seeds
  • 1 tablespoon of sesame seeds
  • 1 tablespoon of sunflower seeds
  • 2 tablespoons whole almonds
  • 1 tablespoon of raisins

Preparation

  • Preheat the oven to 150 degrees for 4-5 minutes.
  • Melt the coconut oil with the agave syrup in a saucepan over medium heat.
  • Pour it into a large bowl where you have previously added all the seeds. Mix it well.
  • Put the mixture on a tray covered with parchment paper 1.5 cm thick.
  • Leave it in the oven for 30 minutes and, once outside, wait for it to cool.
  • Meanwhile, wash the fruit and slice the peaches. Strawberries, if necessary, too. Next, emulsify the Greek-style natural soybean with the hazelnut oil in a bowl.
  • Distribute the mixture into four bowls and add the fruits and granola.
  • Mix the lemon juice and agave syrup in a small bowl and distribute it to each bowl. Sprinkle the mint leaves and serve immediately.

Tips

Granola keeps perfectly in an airtight box, so you can double the proportions to get more quantity and have a reserve.
